Pasta Coleslaw-Summer Salad for July 4th

 

Fourth of July is synonymous with barbecues and outdoor entertaining.   Why not, it is easy to throw something on the barbecue pit for family gatherings, friends or casual parties.   

Traditional sides such as coleslaw, potato or pasta salad and baked beans will always be popular, however, I am into time saving make-ahead recipes.  Time and time again, I turn to a recipe in my entertaining book, Holly Clegg trim&TERRIFIC™ Home Entertaining, for one of my favorite standbys, Pasta Coleslaw.  This five ingredient recipe takes advantage of fresh summer veggies, made with ripe juicy tomatoes, crisp green peppers and green onions combined with shredded cabbage and pasta.  For speedy preparation, pick up a bag of shredded cabbage, rather it is purple or not and use whatever pasta is in the pantry.  This wonderful combination of ingredients has a creative flair with a flavor to match.  Last, mix with the creamy light dressing that coats this Pasta Coleslaw to perfection.  So, if you are asked to bring a summer side to your barbecue,  surprise your group with this innovative version of two traditional favorites.

 

 

Pasta Coleslaw

Pasta and coleslaw team up to create a trendy salad with a fabulous, light and creamy dressing.  From Holly Clegg trim&TERRIFIC™ Home Entertaining: The Easy Way

 

Makes 6-8 servings

 

8 ounces fussilli or farfalle  pasta

2 cups shredded cabbage (purple preferred)

1 cup chopped tomato

1 cup chopped green bell pepper

1/2 cup chopped green onions (scallions)

Creamy Dressing (recipe follows)

 

1.  Cook pasta according to package instructions, drain and set aside.  In a large mixing bowl, mix together cooked pasta, cabbage, tomato, bell pepper and green onions. 

2.  Toss with Creamy Dressing, and refrigerate until ready to serve.

 

Creamy Dressing

1/4 cup light mayonnaise

1/3 cup nonfat plain yogurt

1 tablespoon lemon juice

1/2 teaspoon minced garlic

1/2 teaspoon dried tarragon leaves

Salt and pepper to taste

 

1. In small mixing bowl, mix together mayonnaise, yogurt, lemon juice, garlic, tarragon and salt and pepper to taste.
