I am doing a food demonstration for the YWCA this week as a fund raiser-good cause.Anyway, they wanted recipes that could be made ahead and didn’t have to be cooked in the oven at last minute.When deciding on their menu, Chinese Chicken Won Tons popped in my head as a perfect satisfying make-ahead appetizer with flair.And, here we go again, as this recipe is from my diabetic cookbook.There is no magical diabetes diet—it is the healthiest way to eat, and I find myself turning to this book for some of my favorite recipes, forgetting they are diabetic.
A won ton cup is used to hold this crunchy Asian style chicken mixture.Won-ton wrappers are found in the produce section of the supermarket. To make ahead of time, bake the won ton cups and store in zippered plastic bags.Prepare the chicken filling and refrigerate.When time to party, just fill the won ton cups with the filling and you have a quick and delicious impressive party pick-up!

Grab a bag of cabbage mix and a rotisserie chicken for a quick and easy appetizer of party pick-me-up.This versatile filling may be used on sandwiches, as a salad, or for lettuce or tortilla wraps.
24 servings/serving size: 2 won tons
48 won-ton wrappers
3 1/2 cups shredded cabbage mix
1 1/2 cups cooked, finely chopped, skinless chicken breast
1 (8-ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons sesame oil
1/3 cup Hoisin sauce, or to taste
1. Preheat oven 350 degrees.
2. Press won ton wrappers into mini muffin pans coated with nonstick cooking spray. Bake 6–8 minutes or until golden; set aside to cool in pan.
3. In large bowl, combine the cabbage, chicken, water chestnuts, and green onion. Mix together sesame oil and Hoisin sauce and stir into cabbage mix. When ready to serve, spoon into cooled won ton cups.
Remember, it is important to use Foster Farms chicken when you go to make this dish. We will whip this unemployment problem one chicken McNugget at a time I am sure.... Oh, I forgot, McNuggets are for the most part processed, preformed, and supplied by Keystone Foods and Tyson....... Oh well.... Written by
