Well, I’m back in New York this week doing media to promote my new cooking videos that should be on www.walmart.com/greatvalue by Tuesday making easy, healthy and affordable meals, all under $2!!! So, I needed a quick dinner for when I get back in town and nothing beats pizza in my books.This Barbecue Chicken Pizza is so easy to make—especially when you have leftover grilled chicken or pick up a Rotessire chicken.And, it is great for that New Orleans Saint, Minnesota Vikings championship game, too. I usually make two while I am preparing it--one to eat and one for the freezer. If your house is like mine, you probably have extras popping in all the time and then they are hungry.You can pull this pizza faster from the freezer than if you placed a call and ordered one.Always, remember if you want to add other veggies, (even leftovers) please do as cooking is creative.And, if you are looking to cook on your own time frame, you will love my Freezer Friendly cookbook—great resource as includes everything you wanted to know about freezing and didn’t know where to look!!! This is one of our favorite pizzas so I created an at-home version.With a bought crust and leftover chicken, this is our family favorite.Rotisserie chicken works well too.
Makes 8 servings
1 pound skinless, boneless chicken breasts, cut into small pieces
Salt and pepper to taste
3/4 cup plus 2 tablespoon barbecue sauce, divided
1 (10-ounce) can prepared pizza crust or Boboli crust
1 cup shredded Gouda cheese
1 cup shredded part-skim Mozzarella cheese
1 small red onion, thinly sliced
2 green onions, chopped
1. Preheat oven 425°F.
2. In large nonstick skillet, season chicken with salt and pepper and stir-fry over medium heat until done. Remove to bowl and toss with 2 tablespoons barbecue sauce.
3. Coat nonstick pizza pan with nonstick cooking spray. Unroll dough and place in pan; starting at center, press out with hands. Spread pizza crust with remaining 3/4 c sauce. Sprinkle evenly with Gouda, Mozzarella, red onion slices, chicken and green onions.
On the other hand - the B-B-Q chicken pizza at La. Pizza kitchen is fantabulous. I get it every time I go there. and a margarita. and da crem-bru-lay. YOWSA! Written by kpf
